I like Chai cause it's spicy. My Mum makes it and it is delish except for when we don't have any cinnamon sticks and have to use ground cinnamon. That sucks.

Santa Cruz is one of the chai capitols of the U.S.A., a tidbit I learned from the in-flight magazine as I was flying out to that very town to interview for the job I've held ever since.

I like chai, especially if it's made with soy milk (but then it has to be done really carefully, or the tea and the soy milk separate with catastrophic results). But these days I mostly drink pu-ehrs and oolongs.

my chai recipe, modeled on my indian grandma's recipe (which rocks):

use a smallish chunk of peeled fresh ginger, some fennel seeds (if you have them), a v. small cinnamon stick (don't use too much cinnamon), green cardamom pods (crush them between your fingers before adding), and just a few cloves. boil all of this in water with a black tea bag for about four minutes. add milk and keep boiling for a few minutes. then strain and serve (you shouldn't need much sugar...i don't use any.)

I love chai and maybe I'll try the recipe geeta shared if I get really motivated. That being said, my husband hates it, as he hates all tea - because it "tastes like hot water." (Actually, in the case of chai he complains that it "tastes like hot water soaked in a spice cabinet.") Jena, do you usually like tea? Because if you are not a tea fan I don't think chai is going to be your favorite...

1 star anise nug
bring to boil
add 2 orange pekoe tea bags (alt english breakfast)
1 asam bag (alt irish brakfast)

chai is one of those things that prob like has infinite variations, feel like the thing thats maybe hard to understand from an occidental tea drinking mindstate is a. the amount of tea required b. bringing it to a boil after the milks in, those are both key imho but im not really an expert

boiling milk definitely changes the molecular ... structure? of the milk. denatures proteins or something. I used to make homemade yogurt, it's important to heat the milk but not boil it when you're doing that.

Drinking a lot of chai at the moment. In fact not drinking any other tea (though I probably only have 4 cups a week at most anyway). Have even taken to doing latte things at home with warm milk and a buzzing forther device. Like to dip Malted Milk biscuits in it.

geeta's recipe upthread seems closest to what i've been doing and i wasn't really thinking i was making chai when i started just mixing spices into a cold refreshment a couple years ago. have been mixing some ground cardamom, turmeric, ginger juice, ground clove, and cinnamon tincture with some maple syrup and adding soy milk. it freaking tasty af, and kinda energizing. but today i noticed a dwindling supply of garam masala and just added some ginger and turmeric to that and i am completely satisfied with the result.
