Add some sliced sauteed courgettes, mushrooms, onions and garlic. Maybe some tinned sweetcorn kernels. Sprinkle with grated cheese.

Melt two tablespoons of butter without letting it boil or burn. Hold off the heat and whisk in 2 tablespoons of flour. Get all the lumps out. Put back on the heat and slowly whisk in 1 cup of milk. STIR CONTINUOUSLY until it thickens. Add approx 1 wheelbarrow-full of shredded cheese of yr choice (cheddar + swiss/gouda/gruyere + romano?) and S&P to taste. Pour over the mac, top with browned bacon/sausage/breadcrumbs. Stuff into 350-degree oven for 15-20 mins.

NB: Just kidding about the wheelbarrow, better add about 8 oz of cheese, I think? Too much and the sauce turns stringy and loses the gentleness of the bechamel.
