I have tried gazpacho, I have never *made* gazpacho. Similar to how many a Southern Californian buys a taco without ever having made one.

anyway I finally tried WHITE gazpacho at a fancy NYC restaurant last year, it was totally amazing. made from almonds, no dairy, just indescribly delicious. I like the red stuff too, been getting it from Zabar's of all places -- kosher gazpacho?
my friend who's from Spain gave a big lecture once about gazpacho and of course nobody in america knows how to make it and mexican gaz -- forget about it. I guess white gazpacho is a regional variation.

Since that time, gazpacho has remained relatively unchanged - an unpretentious soup designed to quench the thirst evoked by the unrelenting Spanish sun.

Whenever I've had it in spain (mainly in catalunya) it has been server with chopped vegetables and crutons in little side dishes to sprinkle on as required.

This is how I do it every summer. I don't have the recipe anymore but this is more or less right...

2 tomatoes, seeded and chopped
1 yellow or orange pepper, seeded and chopped
1 cucumber, chopped
1 onion, chopped
1-2 cloves garlic, minced
2 c. chicken (or veggie) stock
1 c. V8 juice
1 Tbs. red wine vinegar
12 ice cubes
Salt and pepper to taste

Combine. Refrigerate. (If you eat it immediately, it won't taste right at all.) Once the ice cubes have melted, taste. If it's too strong, add some cold water. Serve.

*The raw onions and garlic will give you terrible breath, so make sure everyone around you eats some too.

To each his own but to me bloody marys are disgusting and a good gazpacho - a GOOD one, I stress - is infinitely more delicious. A gazpacho is a delicate and subtle concoction, not some sinus-clearing horseradishy bullshit you throw together with vodka. That aside, I want to mention that the worst gazpacho I ever had was at a restaurant called Spain, located at 113 W. 13th St. in Manhattan. It was like watery tomato soup out of a can.

I've made that NYT gazpacho recipe 2-3 times a week every summer since they published it. At first followed almost to the letter, but it got boring and I started adding in random stuff (most frequently fruit, herbs, hot peppers, multiple vinegars). I make it in the pitcher using an immersion blender and drink it out of a glass like lemonade between meals or instead of a meal.

The best tip they give you in that recipe is not to skimp on the olive oil. It really makes all the difference. It only ever turns out great when I'm pretty worried that I added way too much olive oil.

I am happily lazy in that my preferred local market makes solid gazpachos to go during these months. Pretty much I have two a week for dinner usually, a little tofu added for protein and I'm set.
