Sending packages across seas

Okay I know there was a thread about this recently which included a helpful link. But I cannot find the thread nor the helpful info online.

I'm sending a package to a friend in the UK and she has requested foodstuffs. Do I need to list that on the little slip? Will they let me send it? Will they find out if I LIE?

The post 9/11 world confuses me. . .

If you're mailing stuff, and it doesn't contain any prohibited stuff (meat, dairy, seal skins, horror comics - check this list!), I think all you need to do is list "gifts" and spell out the generic category ("jam", "candy", "pickles").

I shipped some cookies to Australia once that got held up in customs and then had to be paid for, I guess because I didn't specify they were gifts. :(

This one's kind of worrying, under "Restrictions": Foods or beverages to which any preservative or other substance has been added must comply with the British regulations for importation.

What does that mean, exactly?
