Explain hot dish

The real life zombies thread has reminded me that while I intrinsically know what hotdish is, its true Platonic nature remains elusive. Photo evidence welcomed.

minnesotan for a casserole. potatoes and green beans are popular ingredients.

THIS IS A TRADITIONAL HOTDISH, SERVED "LUTHERAN BRUNCH MEETING" STYLE.

John Justen, Friday, 15 June 2007 15:26 (eighteen years ago)

Don't let John fool you: those are actually Episcopalians, and that's a casserole.

"Hot dish" is supposed to have a can of cream of mushroom soup in it.

Sara R-C, Friday, 15 June 2007 15:46 (eighteen years ago)

When I was served it was not potatoes but "tater tots". Haute cuisine it was not. Hell it wasn't even hearty cuisine.

ledge, Friday, 15 June 2007 15:54 (eighteen years ago)

A typical recipe. I found this is the First English Lutheran Church cookbook, from Cannon Falls, MN (the church my grandmother goes to). I will copy it exactly as written:

Chicken Hot Dish

2 c. diced chicken
1/2 c. diced onion
1 c. diced celery
Mushroom pieces
1 c. mushroom soup
Approx. 2 c. chow mein noodles

Combine all ingredients; add more liquid if it seems dry. Bake at 350 degrees.

Variation: Cashews or almonds may be added to mixture and/or sprinkled on top. Chow mein noodles may be added to top.

Sara R-C, Friday, 15 June 2007 16:05 (eighteen years ago)

Is hot dish like hot lunch?

Ms Misery, Friday, 15 June 2007 16:06 (eighteen years ago)

Is hot lunch a casserole with crm of mushroom/celery/chix soup in it? If so then y.

Laurel, Friday, 15 June 2007 16:06 (eighteen years ago)

Otherwise, n.

Laurel, Friday, 15 June 2007 16:07 (eighteen years ago)

No it isn't.

Ms Misery, Friday, 15 June 2007 16:07 (eighteen years ago)

There are approximately 15 pages of recipes like the one I posted, all of which will come out tasting remarkably similar to one another - no matter what "cream of" soup you add or whether you are using chicken or hamburger.

Hell it wasn't even hearty cuisine.

Every time I have to eat hot dish, I wind up going home and eating something else afterward.

ha ha, no, "hot lunch" is totally different. Unless hot dish is on the menu.

Sara R-C, Friday, 15 June 2007 16:09 (eighteen years ago)

I'm being snarky. I know. But that's what "hot dish" reminds me off.

Ms Misery, Friday, 15 June 2007 16:10 (eighteen years ago)

I kind of want to challenge Ned to make hot dish and then post pictures to the cooking thread.

I KNOW REAL RECOGNIZE REAL

J0hn D., Friday, 15 June 2007 17:50 (eighteen years ago)

tastes about like any other food-extending all-in-one easy-bake casserole. the grand success of campbells was convincing people to use their condensed soups as a pre-made flavoring, spicing, and sauce for big meals.

nabisco, Friday, 15 June 2007 17:51 (eighteen years ago)

its true Platonic nature remains elusive

Here we have the unanswered question. The soul of hot dish, its sine qua non is a certain bland satisfaction. The more deeply it dives into the subliminal, preconscious, mindless desire for belly-fullness, while still presenting to the concious mind (and tongue) a surface quality of blandness**, the more perfect the hot dish recipe.

**The concept of blandness, as used in this context, is not synonymous with lack of flavor, but more accurately denotes an equalness, or indistinguishability, among flavors, in rather the same way that a plateau may rise above a plain, while still resembling it in flatness.

Cream of mushroom soup is so ubiquitous in hotdish that it is often referred to in such recipes as “Lutheran Binder,” referring to hotdish’s position as a staple of Lutheran church cookbooks. The soup is considered a defining ingredient by some commentators.[4]

open refrigerator in dark kitchen. stand three feet from refrigerator. throw four darts at refrigerator; sauté in pan. add one can cream of mushroom soup and bake for two hours. serve on bed of ritz crackers or egg noodles, depending on which you have more of.

I meant to say earlier, this is a very good recipe for dart hotdish.

Walz's winning "Turkey Trot Tater-Tot Hotdish" recipe:
1 pound of fresh green beans, chopped into bite sized pieces
4 slices of Hormel bacon
1 clove of garlic, finely chopped
6 tablespoons butter
5-6 tablespoons flour
2 ½ cups Whole milk
½ cup half and half
2 teaspoons salt
3 cups Kraft shredded sharp cheddar cheese
1 pound Jennie-O ground turkey
½ teaspoon sage
1 teaspoon pepper
1 egg
1 tablespoon olive oil
½ cup green onions
¼ cup chopped onions
1 ½ cup chopped baby bella mushrooms washed and well dried
1 package tater tots
Pre-heat the oven to 375 F.
In a medium bowl, mix turkey, garlic, sage, green onions, egg, pepper and one teaspoon salt.
Using a 10-inch cast iron skillet, heat the olive oil and then cook the turkey to the well-done temperature of 165 F and place in 9-by-13-inch baking dish. (Browning similar as you would for ground beef).
Blanch the green beans by dropping them into boiling water for 2-3 minutes. Using a slotted spoon, remove and plunge them into ice water. Once cool, drain completely and gently mix them in with the turkey in the dish.
Fry the bacon until crispy then chop into ¼-inch pieces. Add bacon into turkey mixture.
Heat 2 tablespoons of butter. As soon as you see that the butter foam has begun to subside, indicating it is hot enough, add the mushrooms. Stir continuously and gently with wooden spoon for 4-5 minutes or for about 2 minutes after browning point. Remove from heat and add to casserole dish.
In a sauce pan, melt remaining butter over medium heat. Little by little, sprinkle flour into the butter. Let cook for 2 minutes, then slowly whisk in the milk and half and half. Cook for 2 more minutes, add diced onions and salt and pepper. After a minute, stir in 2 ½ cups of cheese until melted.
Pour cheese mixture over the ingredients.
Scatter tater tots over the top and remaining cheese.
Bake 45 minutes or until golden brown.

The Vikings are like a Minnesota hotdish. The ingredients seem promising when you’re putting it together. But when it’s time to feast, it’s just undercooked tater tots and sadness underneath.
