The only time I use "Oh, absolutely" is when someone says something I think sounds pompous and I want to have a private joke at their expense.

It's not that weird. I'd guess you do that when the question contains some kind of active concern, like "OMG did you remember to turn off the oven?" The answer is "yes, I did," but it still makes some sense to say "no, no," as in "no, don't worry about that."

Some Romance languages use specific words to mean stuff like, umm ... you ask a negative question ("Don't you have any money?") and a certain word in response kinda means "Actually YES, that is incorrect, I do have money." Also the other way around -- "yes, I concur with your negative statement, the answer is no." Half the time we're just sorting these out with tone of voice, and usually omitting words: every "no, yeah, no, I did" makes perfect sense if you expand it to "no (don't worry), yeah (I took care of that), no (really no problem), I did."
