there's nothing wrong with zippers--they're not super-blatant once the boots are on with pants (i'm assuming you'd wear them with pants rather than a sundress).

Search for them as "chelsea boots" or "elastic paddock boots". Although beware that with the latter you will got lots of proper equestrian-y things that you won't like, but you can still get some interesting results that might work. (Sometimes also called "stock boots" but that's a terrible google result.)
