Even with canned mushrooms, it's mostly a texture thing. They get all puffy and mushy. Some things are fine pickled! Like... cucumbers! And jalapenos.

I looked some stuff up:

Canned mushrooms are brined, not pickled, and then only mildly so. Which means you put just enough salt in the water to keep them from spoiling.

A pickle or anything that has that tangy pickle-y flavor are brined, as well, but at a high acidity, usually using vinegar. The acidity doesn't just waterlog the vegetable as salt usually does, it changes it fundamentally.

Olives are a special case, and from what I can glean, the processes of brining and fermentation that go into olive production are highly specialized. Mostly because if you eat them right off the tree, they are incredibly nasty.
