Morbs, your post is quite similar to what my now deceased paternal grandfather ate with startling regularity. Iceberg salad instead of 'greens' though, and replace beer with scotch. Sometimes the tater was baked I think. xp

i had a dream about a mcdonalds sandwich called the mcbacon last night. a friend of mine ordered two of them & said they were 'ok'. it had fried chicken, a cheddar cheese spread & bacon (i just had a couple chicken wraps). turns out the mcbacon does exist but is only available in amsterdam or something. i think id read about it before but forgotten it or something.

put bread down in pan, put cheese on to bread, let it melt for a bit (but not all the way), but bread on top of bread, flip when bread touching pan looks adequately browned.

Oh yeah, sorry, I make the whole sandwich first and then cook it already assembled. I tend to put like layers of ham and/or tomato in mine, though, so it's more "assembly".

Here's how I do it:

Put skillet on stove, low heat. (you don't want it to get too hot)

Have soft butter, 2 slices of bread, 2 slices Tillamook extra sharp cheddar, 4 dill pickle chips.

Take 2 slices of bread out of the loaf. Butter the outside face of slice 1 and set it butter side up on plate. Butter the outside face of slice 2, and place it butter side down on slice 1 (so the buttered sides are together).

Put 2 slices of cheese on the unbuttered face of slice 2. The 2 cheese slices will overlap in the center section and the sandwich edges will be single cheese layer. Evenly place 4 dill pickle chips on top of the cheese.

Carefully pick up slice 2/cheese/pickle assembly, leaving slice 1 on the plate. Gently place the assembly butter side down in the hot skillet. It should sizzle a tiny bit, but not a lot. Now place slice 1 butter side up on top of the sizzling assembly.

Leave alone in the pan for 4 minutes, then carefully lift up the edge of the complete assembly to see how things are going on the sizzling butter side. The hope is the cheese will get melty enough to hold the pickles and slice 1 in place for the flipping. But if the sizzling side is getting too brown, you will just have to flip it regardless. Flip the assembly with a spatula so the butter side of slice 1 is now down in the pan and if it shifts, gingerly poke the layers back into place. Leave alone for 4 minutes (less if things browned too fast, or turn down the heat). Remove to a plate, slice diagonally, eat.

Nice lay-out, Jaq! I used to melt butter in the whole pan but it always browned and smoked too much where the bread wasn't resting, so I've started buttering the bread with much better results.

Place into warmed hard shell Old El Paso or Ortega taco shells, serve with iceberg lettuce, a jar of taco sauce, canned black olives, sour cream, and pre-shredded cheddar cheese from a bag.
