A shit-eating grin is the self-satisfied smile someone has when they are taking pleasure in something unpleasant. There is a certain amount of implied vacuousness in it because the person wearing the shit-eating grin is too oblivious to realize they have just metaphorically eaten shit.

Don't people also use it to mean shit as in "bullshit"? That is, someone having a grin plastered across their face while they are completely lying to you...and maybe an added component is that the person knows that you know or at least suspect that they are lying to you (but they could give a fuck about that or are even deriving a perverse thrill from it..)
