Tikki are like hot dogs/ street food = so bad for you but so good

Gol gappas also great with tikkis & channa. Ideally you want some dahi/raita (yogurt) to stay cool

^ doesnt look like much but the spices are *amazing* ~ black pepper vs chili, lemon juice vs mango powder, fighting it out on your tongue!

using sulphuric salt + chickpeas but no asafoetida doesnt seem like a good idea though.

Yeah slocki I got some of that at Le Roi Tandoori King on Jean-Talon for $3.50 not too long ago and it was a good buy for $3.50. While I waited there was a large table of francophones who debated amongst themselves what "curry" is, "is it a spice? no, I think it's a root vegetable." The wise "tour guide" type explained that it's a mixture of things and they all wondered what. And when the waiter came to order one nice young fellow asked if there was any food without spices, at all. At all. Sans épices. He explained that he was "allergic to curry" and said that the one time he had eaten Indian food he had noticed irregularities in his digestion the following day. Allergy. And people wonder why I'm hard on the food in this town.

I have been doing versions of this recipe this week, when I haven't as much time a slow cooker version where I still fry the onions and spices in ghee before adding them. And sometimes adding some meat. It's never anything less than extremely good.

I use yellow split peas more for soups. Not sure what the difference is, but when you use less water in the chana dal recipe, you get an exquisite texture to the food that you wouldn't get with yellow split peas.

Ive made this a few times and it's had me considering getting a pressure cooker or instant pot dealie so I can cook the pulses more easily. Though yellow and red peas/lentils cook fairly quick anyway.

I'm thinking of getting an instant pot, because all the rice cookers available in the UK (unless you are wealthy enough to spend hundreds on one) are teflon shit and I've seen one for £56 and it has a stainless steel inner pot.

I got one myself this week and it functions really well as a rice cooker. Just stick some some basmati in there for 3 minutes at high pressure and then leave it 18 minutes in the steam and viola, extreme good rice.
