Ledge, in my version the sandwich is open-faced on a huge piece of lightly toasted crusty white bread or chollah (because otherwise the bread disintegrates) and simply must be made with day-after leftovers. The two ways to do this are with sliced leftover turkey and gravy over the stuffing/mash/toast foundation or when the turkey carcass is down to its last, strip it, chop up the meat and mix w/gravy so you've got what the school lunch folks used to call 'turkey gravy'. You must have just enough bread crust left to wipe the last of the gravy off the plate.

this is such a staple of holiday eating for me, and uber-classic year-round. little pieces of fluffy white heaven swimming in a lake of gravy.
