I happened to visit Bard campus recently and it really makes a nice half day visit. The contemporary art museum there is surprisingly large and very good -- a lot of *brand name* artists and interesting lesser known ones; seems to be a heavy focus on video art although that might just be currently. There's a Frank Gehry-designed performance center (I didn't see anything there but I imagine they have some worthwhile events). The original building is also very attractive, has a nice garden and is situated on a hill with a breathtaking view of the Hudson river. And you can play spot-the-Steely-Dan lyric (I didn't know there was really a Barrytown!).
Only drawback being that we didn't find a good place to eat, although maybe we were just misled by the person we asked.

First three and last one on your list I have done and like.
New Paltz is fun - the downtown is corny but amusing and has decent books/records/coffee. The area outside the town part of town is gorgeous.

The coffeeshop I went to in New Paltz had The Brooklyn Rail.

Save for Summer: Tubing on the Delaware River, you can take the bus to Phoenicia if you dont have a car.

Yeah, the town of Woodstock is something to skip. We stayed in a cabin outside Woodstock that was very nice.

nearby lake minnewaska start park is cool, lots of good walks and some mountain/boulder climbing action if you're into it.

I haven't figured out yet how to copy urls on my iPhone 3g but there's a thread called 'easy reach of NYC for a day'

the area around warwick, ny is good for a day trip if you like farm-y stuff. rogowski farm is great, there are a bunch of u-pick orchards, and bobolink dairy is nearby in vernon, nj.
ps - as dan well knows, i love short hills. also the shops at bridgewater commons, which is closer to nyc and has the advantage of being near the fireplace (http://thefireplacerestaurant.com/hourslocation.htm).

Fuck Bridgewater Commons. My first summer back from college I couldn't get a job there. Not at the Sam Goody. Not at the 1hr photo place. I don't remember it being very special though. It is on the way to Sommerville, which is a cute little town with some neat antique stores, and the place where you convinced me to try Indian food for the second time, after the really bad experience I had in the east village with Morgan a few years before that turned me off to it for years. It's also on the way to Princeton.

(well, next to my hometown, but close enough anyway)
Hoagie Haven is really not that good. I'd rather pay a whole extra dollar for non-rotting meat.

??? i have never had rotting meat any of the times i've been there
if you have a car, delicious orchards in colts neck, nj is definitely doable in a day. cider doughnuts mmmmmmm
