parma and san daniele are types of prosciuttos (which just means ham). TBH I'm only thinking of dry hams here.

Speck is definitely ham, it is basically smoked prosciutto. Bresaola is not ham because it is beef.

Black Forest ham (the stuff you get in packets here is way chemically but the stuff you get in Germany is <3, German hotel breakfasts are all smoked ham and salami and smoked trout, A+++ awesome way to start the day. apart from the bread, which resembles eating breezeblocks)

I thought it was dry-cured. I'm not sure I understand the difference though. I would eat ALL the hams, wet or otherwise. (Not many British dry-cured hams if I am understanding the difference correctly but I would eat all ours too, nom nom.)

There are plenty of british dry cured hams but not many raw dry cured hams. York Ham is an example of a british dry cure.
