I've definitely splashed peanut oil on myself while trying to mix the separated PB. That said, I have a jar of "no stir" organic crunchy PB in my cupboard right now, so maybe this is a false dichotomy? On the other side of the continuum, Peter Pan doesn't really taste like peanuts.

the upside-down thing doesn't take a month. maybe a few days. and it's not really that hard to stir without massive spillage, it just takes time. (i use a butterknife into the center, stir in gently widening circles.) the kind i buy does have a little salt in it. but i pretty much can't eat anything but "natural" peanut butter. (the other stuff isn't really peanut butter at all, imo. it's some kind of peanut sugar-paste.)

i have friends who think generic non-natural peanut butter is inedible and disgusting and way over-processed, whereas i think it tastes just fine, although natural peanut butter is okay too. i sort of suspect that if the tastes were reversed, they'd be complaining about how processed peanut butter is just mashed nuts and oil.
also, i use regular peanut butter in sauces and i've never had a problem with it being too sweet. sometimes i even add honey, if i'm also using a good amount of soy sauce.

i'd like to add that in favor of regular peanut butter is that it's cheap...the whole point of peanut butter is that it's a cheap food that makes you full.
natural non-peanut nut butters are great though, i almost never have an excuse to eat them but almond butter is heavenly.

peanut butter + sugar can be a great thing. i like peanut butter pie, peanut butter ice cream, peanut butter cookies, the sweetened peanut sauces you get in thai food. but i also like nonsweetened peanut butter -- especially on toast (my favorite breakfast these days). if you buy peanut butter that already has sugar in it, you eliminate a whole peanut butter taste spectrum. and if i want sweetened peanut butter, it tastes better to use actual peanut butter and add sugar.

I also hate peanut butter cookies and peanut butter in ice cream. I am not against the idea of anything sweet + peanut, i just prefer a savory taste on my toast (with jam added if I want sweetness -- more flavor contrast that way)

i know someone who made his own "natural peanut butter" while living in argentina. apparently he crushed up peanuts and added oil, salt, and sugar. no verdict on how the taste compared, he was just really proud of it.
