Flan is of course glorious. Misbegotten memory from my seventies youth -- at the elementary school in the cafeteria are some cartoon-graphic signs up showing kids from around the world (or whatever) making favorite dishes. One of them is boldly titled (US-centric reference approaching) "Chico and the Flan."
