Oh man, I love pink peppercorns. I had a wine and cheese party last summer and we rolled goat cheese in pink peppercorns. It was pretty incredible.

I think I'm developing a theory that says you can add pepper at the beginning of cooking (like any spice, sauteing black pepper in oil--even if with your aromatics--can make the whole thing more peppery) and, naturally, at the end, but not in the middle.

also, i think restaurants come and do it for you maybe because big pepper-grinders like that are actually really pricey? i bought a small one and it was like $20. the tall wooden ones were priced up to like $60.
