I made a strawberry pie 2 wks ago. Huge amounts of cheap strawberrys in Chinatown that weekend, but nothing since then. OK, I bought the crust premade but the inside part (= mostly just cut-up strawberrys & sugar) I did myself. It was delicious and easy and I decided that making pies was my speciality. I decided to follow up with an apple pie last weekend and it was horrible.

Are strawberry pies just easier to make than apple pies? Or did I get lucky with that first pie? Should I stick to making moderately good strawberry pies or just make crappy apple pies until I figure out what I'm doing wrong? (Hint: Apples are one million times less expensive than fresh strawberries, except when deals are to be had in chinatown.) And of the many non-apple, non-strawberry pies out there, which is your favourite?

ILE is a better acronym, in that it sounds like "I'll" and "isle", whereas ILM is quite hard to pronounce without sounding as if you've been to the dentist in the last two hours.

it wasn't horrible in itself only in comparison to the fine strawberry pie of the previous week. too runny and liquidy and not stuffed enough. and the roof pie crust wasn't properly affixed to the foundation crust, but I can't blame that on the apples.

oh, well theres yr problem.
An apple pie should not have a roof, it should have a " criss cross pastry strips" motif. this allows the steam to come out thus side stepping the runny-ness issues of which you speak.
