do you like chicken salad? this is a salad that gives me happiness, in many forms. on a wrap, on a sandwich, on a bed of greens. with cranberries, with celery, or sometimes how they do it with a little cumin.

if you have any experiences with chicken salad that you'd like to share, please feel free.

my boyfriend makes one with curry powder, peach preserves, lime juice, water chestnuts, pineapple, & rice-a-roni, among other things

i swear it's good, i didn't imagine it could be when i heard the recipe but it was some of the best i've ever had

so we had some leftover grilled chicken that i cubed and mixed with some of the glaze (honey, lime, soy) celery, red onion, sorrell and ev. that made a pretty good samwich

Frozen boneless chicken parts don't have any flavor, and there are lots of better things to do with the leftovers pulled off of a whole roasted bird.

If I were going to make something shredded and sandwich-ready out of chicken, I'd sorta rather it were like a stewed/shredded chicken, I guess? But seriously, next time you make any sort of white fish at home, save some, flake it, and make a fresh herbed salad -- it's hard to beat.

herbs, spices, maybe grapes, maybe some other things, but sure, I guess the core thing would be shredded chicken mixed into a sort of spread using mayonnaise or dressing

xpost - I think part of my antipathy to chicken is the way the chicken used is often dry and bland and does that teeth-sticking thing, and instead of the fat around it preventing that like it's supposed to, the chicken somehow winds up dragging down the rest of it instead

i cannot concur. i find it a good canvas for the dressing, nice and substantive. i also feel like the chicken salad i get doesn't really used shredded chicken -- more chopped.

i'm not really objecting to tuna -- i like tuna salad, but it has to be fresh. i don't tend to like the look of a tuna salad that's been sitting in the deli counter all day.

naw dude i rep for tuna salad itt i mean the specific spices and greens and grapes and walnuts used to make a CHICKEN salad just dont seem as appetizing when making a fish salad. white fish + dill + dressing is dope, sure but its not an equivalent

Maybe I don't like chicken salad bcz the only type I have ever had has been chicken + mayonnaise + some coloring agent for the mayonnaise. This has been my experience w/fruit salad, tuna salad, egg salad, Jell-o salad, pasta salad, and potato salad. Maybe it's a Mormon thing.

xp the bf's grandma is a horrible cook. Probably my most recent bad culinary experience was thanksgiving there a couple years ago. There was also praying, and a go-round-the-table "what are you thankful for" exercise that resulted in some embarrassing Mormon-ese. I think I said I was thankful for pie.

I really like a chicken salad I saw in a Nigella book.

* 1 Thai chile, seeded and minced
* 1 large garlic clove, peeled, minced
* 1 tablespoon sugar
* 1 1/2 teaspoons rice vinegar
* 1 1/2 tablespoons lime juice
* 1 1/2 tablespoons Vietnamese or Thai fish sauce (nuoc nam or nam pla)
* 1 1/2 tablespoons vegetable oil
* 1/2 medium onion, finely sliced
* Freshly grated black pepper
* 7 to 8 ounces white cabbage, shredded
* 1 medium carrot, shredded, julienned, or grated
* 7 ounces cooked chicken breast, shredded, or cut into fine strips
* 1 bunch mint, plus extra for garnish, leaves roughly chopped
* Salt

Directions

In a medium bowl, stirring with spoon, combine the chile, garlic, sugar, vinegar, lime juice, fish sauce, oil, onion, and black pepper, set aside for 1/2 hour. In a large bowl combine cabbage, carrot, chicken breast, and mint, tossing with tongs. Pour cabbage mixture over the dressing, tossing with tongs, slowly and patiently so everything is coated. Add salt, to taste. Serve on a flat plate with mint for garnish.

I like the curried, grapey kind. I don't usually eat meat at lunch, but once in a while I'll break with routine and get a container of chicken salad when I'm working near a certain quality food establishment, and it's amazing how much energy I have afterwards.
