i have never eaten this regional food product.
the idea of a green boiled peanut repels me. and you eat them by sucking them out of the softened shell? ewwww.
otoh, this is maybe not very different at all from edamame, which i enjoy.

They are really like nothing else though since texturally they are a lot uh slimier than edamame and the taste is totally different. Gotta get 'em fresh in a paper sack from the side of the road too. Canned is mech. Although I have had them frozen and they were okay.

They're good! Edamame is a good reference point. My wife makes them so salty they leave a salt crust on the saucepan she cooks them in.

They are very good, and I'm neither a native southerner nor very tolerant of slimy boiled things. Well worth a stop at a roadside stand if you are traveling through the US south.

They're easy enough to make! Raw unshelled peanuts (well washed), a lot of water, a fair lot of salt, bring to a boil, drop the heat back and let them simmer for 40 minutes or so, depending on how done you want them. You want the water to penetrate the shells, so when you bite the shell gently you get a burst of briny goodness.

Classic as fuck. Peanut Patch makes the best canned version, but as mentioned above, fresh boiled peanuts are the way to go. I usually do a half cup of salt for three pounds of green peanuts at a high boil for a little over an hour. Pissed many a roommate off with the smell.
