this isn't "really" a food thread i'm just curious to know in a general sort of sense what kind of hamburgers are being eaten and at what frequency

Only when I visit my parents in Alabama. Here in NJ, the closest thing I've found to a decent burger place is Five Guys, and while I appreciate being able to get an onion, garlic & A1 burger, the greasy, unseasoned meat doesn't really do it for me, and the inability to get less than a pound of fries is frustrating. (I do like that they leave the skins on and you can get vinegar on them, though. Those are marks of quality.)
When I visit home, I always end up going here. Jalapenos, onions, mushrooms, Tack Sauce (local sweet habanero sauce), so fucking good. Or sometimes Milo's- I don't know if other states have Milo's, but they really should.

husband makes a great slow-cooked burger - 80/20 ground beef, handful of diced red onion & a can of diced chilies, on sourdough bread (no condiments)...yummo. like a smoky meatloaf and SO goood.
sadly my quest for a healthier eating plan has led us to experiment with ground turkey tonight ;_;
― VegemiteGrrrl, Saturday, 27 February 2010 04:51 (fifteen years ago)
yeah NJ is lackin in decent burger places (or maybe i just dont' know where to go?)
can't remember the last time I had a burger, tbh. when I go back home I usually make blue cheese burgers (blue cheese, worcestershire, &c mixed in with the beef) on the grill.

I'm still trying to figure out how to cook ground buffalo without having it turn out dry and chewy. I've had AMAZING buffalo burgers but whenever I try they come out awful.

Had a Wendy's bacon & blue last week -- it was okay I guess, but really their spicy chicken sandwich is better. Still, credit to them for being willing to offer strong flavors in a generic fastfood world.
Next time I want a blue cheese burger, I'll probably do it myself and put the blue cheese in the middle.
xpost, grind up some fatty bacon in a food processor and mix in with the buffalo?

I have burgers maybe every couple of months, but then I have little bouts of burger-eating. last time was last weekend, when I bought some minced beef and made my own, with chilli, onion. Served them griddled, medium-well, in pitta bread with coleslaw. Lishdelish.

I saw a Cantal burger on a bistro menu last week, for 17 euros. I gather that's just a burger with Cantal cheese. I'm sure it's great but really, 17 euros for a burger? Granted, it was in Saint-Germain-des-Prés, explaining the price somewhat.

I have eaten a lot of fast food burgers as well as a lot of fancy gourmet restaurant burgers in my time, but I haven't had many (if any) that compare to a nice slab of ground beef seasoned with a few drops of Worcestershire sauce, grilled to medium rare on a Weber grill, and served with fresh tomatoes, pickles, white onions, Heinz ketchup, and French's yellow mustard (notice nothing about cheese).
The only thing that comes close to that for me is a well-made "Western-style" with K.C. Masterpiece (original), Onion Rings, bacon, & a slice of medium cheddar.

notes on unconventional burgers:
a few nights ago, at guu w/ garlic i had miniature tonkatsu burgers: pork cutlet, shredded cabbage lightly pickled, mayo, all in miniature chinese mantou buns.
possibly 3-4 times a week, i eat rou jia mo 肉夹馍 at the richmond public market, which is called "chinese burger" on the menu, despite being closer to a pulled pork sandwich, perhaps: pork shoulder braised slowly with delicious stuff like star anise and cassia and dark soy sauce, stuffed in roasted flatbread (traditionally roasted in a clay oven or an oil drum, but here, in a boring old oven), possibly with cilantro or raw peppers but not always.
― dylannn, Sunday, 28 February 2010 02:30 (fifteen years ago)
listen, arby's used to be a big treat for me, when i'd go from moose jaw to regina, to my orthodontist to get my braces adjusted. it was nice and soft, too, with my teeth all fresly pulled back. i can still eat literally a dozen beef and cheddars.
on mcdonald's vs. burger king. shit, i fuck with mcdonald's, i think. but you've usually got an a&w/bk/mcdonald's choice here, and i'll get a mozza burger at a&w nine times outta ten, if i'm in a serious burger mood. just in a gorging mood: probably burger king. cheap mood: mcdonalds.
sorry for not using your burger gifs.

So, this may seem like an odd place to post this, but the vibe here (minus Ms. Gollum) is pretty positive and we're in a sharing thing, so . . .
I've recently had a really good turn in my life. Things are just more straight-forward than they've been in a long, long time, and I'm enjoying putting one in front of the other to keep it going like this. Sort of like hitting a nice flat area on a bike ride . . . you still gotta pedal, but once you got a good spin going, all you gotta do is keep spinning.
Anyway, I took advantage of this very positive time to prioritize things that I want to do. Like, big picture. One of them is to become a truly excellent cook. I've enjoyed cooking up until now, and have had a modicum of success with the things I have made repeatedly. I want to take it to the next level.
Ergo, this weekend is the weekend that I work out my own hamburger recipe. I am thinking somewhere in the 1/3 pound range, but possibly higher in order to stand up to the grill (charcoal, of course).
I will take plenty of pictures to photo document and post them here.

They offer a single-patty Baconator now I guess, but when I went into Wendy's the other day the girl asked "double?" when I ordered. I had a moment of confusion. Double Baconator? That would be four patties. I mean, wouldn't a single Baconator just be a Big Bacon Classic (or whatever they're calling it now) without lettuce, tomato, onion, and pickle? Or is there actually double bacon on a Baconator, whether single or double?
I miss Wendy's. I have been living in Wendy's Exclusion Zones for a couple of years.
Had a Big Mac a couple of hours ago. I swear there is some chemical in the Big Mac that is actually beneficial to health. When I'm rundown or whatever I swear it does me good. Maybe there's a ton of zinc or vitamin B12 or something in it, despite all the cholesterol. I have been eating a lot of pizza lately and I swear pizza is harder on my digestive system than Big Mac.

I generally side with the "break the meat down as little as possible when forming the patty" crowd so I don't mix stuff into it, but I'm not going to say my way is the only right way. (I'm just going to think it.) I will say that my burgers reheat better when they haven't had anything mixed into them.

i didn't have any dry elements to mix in, just went with egg, seasoning, and yeah it was kind of a mess and broke the meat down to a surprising degree. but it held together just fine to cook and immediately eat. since i haven't tried that before, i gather that something along with the egg would help bind it together better?
