In the foreground, escamoles, which are ant larvae. They're pretty popular in Mexico City; I've had them there several times and they're good, buttery, and work well in a taco with some salsa. In the background, gusanos, the kinds of worms in the bottom of mescal bottles, which are also common in Mexico City fried up and eaten in tacos. They're crispy; I eat them with salsa again so really it's a texture thing more than a great taste thing.

Here are chapulines, basically crickets, which are very common in Oaxaca but I've only had them in Mexico City. They taste kinda fishy and kinda grassy. The texture is the special thing, again, crunchy.
