lemon seems more versatile. lemon bars, cakes & pies, lemon zest in all sorts of unexpected things, preserved lemon as a condiment, lemon on baked or grilled fish, lemon in hideous greek soup, etc.

lime's nice but lemon's more versatile. lime will win on challops grounds, nobody who spends much time in a kitchen can argue with any seriousness that lime is nearly as useful as lemon (much less that the contexts in which you can use lime are somehow greater than the numberless places where a little lemon makes a world of difference)

no joek Rock it was really good. my gf did it on a whim and we were both impressed. thinking about doing it again tonight.

now, our TYPICAL method for cooking collards is just to "quick boil" them, i.e., bring water to a rolling boil, drop in the greens and let them go for 4-6 minutes, take them out when they hit the sweet (literally) spot between bitter and bland. so if you're cooking em w/ ham hocks, the tea may not turn out so hot...
