Definitely spaced, but em or en? Em has that old-school book flavour about it, but en seems so much more efficient. Hmm.

I really love dashes and use them all the time, as anyone would probably notice who read ILX with any frequency (also: semi-colons!!!!). The space-em-space seems breezier, freer, and looser than the others. Since dashes convey breeziness anyway, I like that format best.

En, spaced is my autopilot dash style – ton of magazine subbing means it's just where my fingers go when I think 'I need a dash here.' Gets my vote.

(But Laurence Sterne is the true dash hero – dashes of different lengths for different effects, structuring rhythm of prose)
