were it not for my increasingly delicate stomach, i'd go with India as far as food goes. these days, however, i eat Chinese b/c DUMPLINGS! and wonton/egg drop soup are easier on said delicate stomach.

i'll take a pass on who's going to be the future ruler of the world. i'm inclined to go w/ India, but that may be b/c (a) innate contrarianism (what with all the talk about "China is the future ruler of the world"); (b) India (and offshoring to India) has a MUCH bigger daily impact in my line of work than China does; and (c) that India is more chaotic politically and more laissez-faire economically probably means that they may survive an economic shock better than China will. officially, though, that may all be horseshit and FWIW i'm putting my money on Latin America becoming the next economic monster.

i prefer Chinese culture to Indian culture, so i'll vote for China.

probably all of the media attention on China and its growing economy right now. and people tend to think of India more in terms of offshoring than innovation.

the very name! and its associations re 'cradle of civilizations', intellectual lineage from antiquity, 'the celestial empire'

india could claim similar accolades, but as an idea (and insofar as that begets an actual history....) it seems more diffuse and contested

india as an actual place is of course rather more appealing -- a fractious but more-or-less working democracy vs the odious ccp

as someone who's eaten extensively in china, and chinatowns in new york city and philadelphia, I can say that I've only had really good Chinese food at exactly one restaurant in the US that was comparable to even a low-to-mid level in China

I've eaten Indian food in several different countries (not including India), and it has been quite different in every one. Indian food in Australia is weird. Reckon the closest I've got to 'authentic' Indian is in Malaysia. It's quite famous that the anglo-Indian curry is distinct from what you would find on the subcontinent.

There is a very wide range of cuisines in India, obv, and what we get in restaurants here tends to reflect a limited subset of North Indian food. In my limited experience, however, the naan, biryani, etc that you get in medium-level restaurants in Canada and the parts of the US I've been to are very similar to the naan and biryani that you get in restaurants in Mumbai.

The South Indian food from this restaurant is certainly authentic. The range of food that you can get in South India is definitely wider than what our restaurants represent though, which is probably a necessity given the availability of ingredients. (In any case, the restaurants here tend to be more authentic than anything I cook so I don't get too worked up over it.)

I would like someone to give me a real reason why good (ethnic food x) can't be made/found in america. like, in aforementioned flushing the overwhelming majority of chinese/korean food is going to be produced/consumed by immigrants and their first-gen children. the Indian food I've had on Devon in Chicago (the stretch of "authentic" Indian restaurants in the city) doesn't taste significantly different to me from the food I ate living in New Delhi for four years. but i am no "supertaster," i'm just a guy who eats food several times a day.

szechuan btw! or sichuan according to modern pinyin. and yeah the one dope chinese restaurant I've been to in the states was sichuan style. unfortunately, the last report I got from my folks was that they had closed due to lack of business and were scheduled to reopen in philly chinatown, presumably with a menu altered more towards the taste of the locals.

sund4r makes a good point upthread - that diasporic ethnic cuisine is prob based on whatever region the immigrants came from. so it's not very likely until recently that you would be able to find decent sichuan food outside of sichuan, since not many immigrants came from sichuan! idk

schezuan makes a pretty good google search!

from what I know about chinese immigration to america, the up until like the 90s most of the immigrants were from guangdong (taishan esp.) and fujian

guangdong (canton) cuisine imo is nice when you have quality fresh ingredients, but it doesn't 'cook down' well to make cheap fare

I grew up northern chinese food which relies heavily on in-your-face sauces and makes for more satisfying cheap food

There's a N.Chinese Islamic 火鍋 restaurant in SF that is very off the beaten path but always packed with regulars. It's kinda rare for SF cuz of the heavy Guangdong majority of culture/immigration.
