things like spinach tortillas or roasted red pepper tortillas are abominations and ought to be destroyed.

let the tortilla fit the filling imo

fajitas, for example, require a nice soft gummy tortilla de harina, maybe 9" in diameter. and what about burritos? you can't have no corn tortilla burrito, those've gotta be flour as well, but thinner, somewhat crispy (just barely), and more in the 15" diameter range. this is important.

for everything else though (tacos), yeah, go with corn. enchiladas especially.

I don't think there'd be any situation where you'd have to make a real 'decision' between flour and corn, like their uses are so clear-cut that it's not a real vs.

if you're gonna throw one of the two on a griddle, butter it, roll it up and go at it on its own, you're gonna wanna choose a corn tortilla every time, and the reason for this is because they are delectable in and of themselves whereas flour tortillas are merely edible vessels.

i can get pretty fresh store-bought corn tortillas, but you could even just dampen some paper towels and interlace them with the tortillas in the microwave.

I bought some microwave tortilla warmers a few years ago that work great, esp on small taco-size corn tortillas.

no microwave here. i'll totally steam them though!

to me, corn tortillas are like peaches- when good, they are like, AWESOME. but when they're bad, they are really bad, but also a little heartbreaking, because you know how good they _can_ be.

flour tortillas have a lower std dev of yummy

corn tortillas if they're fresh and warm. rancid corn tortillas are horrible and stink up whatever environment they're in.

flour tortillas are harder to get wrong, except for the gumminess factor.

I can't think of anything less appealing than a wet tortilla

i went through a long phase of buying corn tortillas and keeping them in the freezer and frying up when needed with melted cheese and things. it's a good snack!

i made refried pinto beans this week, they got hours and hours of soaking and cooking and then more cooking, and then i fried some corn tortillas and made tostadas and i think they're probably my favourite dinner in the world.

Interestingly, the origin of the taco arabe allegedly stems from Lebanese immigrants in Mexico. Though of course Mexico overwhelmingly goes corn. Tex-Mex largely gets the tortilla de harina, though I guess they often do wheat in Durango.

Chicago has more tortilla factories than Mexico City, apparently. It's not uncommon to go into a supermarket and find boxes of still warm tortillas. Just making you all jealous, non-Chicago people.
