grits with bechamel sauce: is this legit?

I hate saying this to a southern boy like you, but grits aren't legit in any situation whatsoever.

I like grits. Kinda. I think they need butter or cheese. It is interesting how oatmeal and cream of wheat and congee and virtually any other pure-starch-porridge has at least “some flavour”— grits kinda doesn’t?

I was just asked to describe their taste. I thought hard about it and said “tap water. Grits taste like tap water.”

That's very apt. I think of two kinds of grits, the bland tap water kind and the rich stone-ground kind with butter and cheese, that taste like butter and cheese (and corn).
