hah I searched around on the internet earlier today to see if there were any good sugar substitutes for use in baking

Sucralose is the best for baking - aspartame loses its sweetness when it's heated. Saccharine has always tasted bad to me, and stevia is too licorice for most things.

I had to look up what Splenda was.

they're all terrible, so I voted lead acetate because at least my lifetime of eating artificial sweetener would be shortened

they are all disgusting but saccharine has the best name. acetate close second on sound alone.

btw, of the sugar alcohols (xylitol, sorbitol, etc), maltitol tastes exactly like sugar. But the intestinal effects can be really, really awful. We've been eating super-low-carb for almost 2 years now, so I've been experimenting with all these substitutes. Erythritol doesn't have the intestinal effects (it's more a diuretic), but has a pronounced "cooling" aftertaste, so best in things like mint tea.

I think lead acetate is also a hair dye (ala Grecian Formula), so is multipurpose.

stevia

Same choice, and it's kind of eerie how close this is to my reasoning.

Erythritol, sold as ZSweet and Sun Crystals, seems have the best risk/reward profile at the moment.

a ranking of different non-sugar packets was done at breakfast today. from best to worst it was splenda, equal, and far far behind any possible sugar substitute is sweet and low, which was so nasty. it tastes like when you bite too close to the pit of a piece of fruit.

Apparently aspertame. I honestly don't know of any others. I mean, I haven't tried'em yet.

I should look into getting some stevia. Sounds great.

Nathalie (stevienixed), Monday, 5 March 2012 19:01 (thirteen years ago)

I heard that lead acetate was used as a sweetener in alcohol, think it was cider that was particularly cited. & this lead to a lot of people having lip cancer in 17th/18th century England.
