honey-garlic bbq chicken

get a big bowl
chop up a bunch of garlic cloves real nice
stick em in the bowl
add a bunch of soy sauce
add some dry basil
add some chili flakes
add some honey or sugar
add chicken pieces (drumsticks and thighs best)
let sit for a couple hours, turn them in the marinade if need be

heat up your grill real hot
then bring it down to real low
stick the chicken on the grill
baste with the marinade and turn it, repeat for a while
eventually switch to a non-chicken-contaminated marinade and a new brush
when it's basically done, baste on both sides with honey and let it crisp up for a minute on the grill

you can probably just roast it with a lot of basting and finish it under the broiler

or make chicken adobo—simmer the chicken parts in soy sauce / rice vinegar / some water etc for half an hour and finish them under the broiler, keep the juice in the pan and boil it on high until it reduces to a nice sticky sauce

If you have fancy grill skills, grill it indirectly with some tasty wood chips for smoke (something fruity), then do the last minute (with the glaze) directly over the coals.

I reduced some of the marinade into a glaze, and I'm going to try it on a couple of grilled peaches tomorrow.

my chinese bbq sauce would also work real well here.

1 cup dry sherry
1 cup hoisin sauce
1 cup ketchup (i use organic ketchup from TJ's -- no corn syrup)
1 tbsp. minced peeled fresh ginger
4 tbsp. rice vinegar
2 tbsp. honey (i use a whole foods "mango honey")
2 tsp. sambal
1/2 tsp. five-spice powder
2 garlic cloves, minced

Preparation:
Combine all sauce ingredients in a small saucepan over medium heat; bring to a simmer. Cook mixture 5 minutes, stirring frequently.
