biggest Chris Kimball wtf is the Cook's Illus. editorial I read once where he spoke somewhat fondly of the practice of cutting off hands as a punishment for theft. Also I think in the same editorial he was snarking about kindergarten graduations.

i've started using that method! it's awesome.

i just got turned on to cooks illustrated/atk in the last couple weeks which is funny because it is totally my kind of thing and i never even knew it. i am acquainted with one of atk's producers and am dying to ask her about kimball if i see her around.

Ooh I made softies this morning by the old "start with the eggs already covered by water" method which I will happily abandon for a faster one. I do have a personal system where I wait until I hear it at a hard boil rattling in the pan, and then I boil it for 6 mins (using phone as a timer) after that. Prob comes out as a 7-minute egg total, which is better for packing and eating cold later but not runny enough for a home breakfast.

I have successfully made four soft boiled eggs. This is the first time I've ever peeled a soft boiled egg, too. In the past, I always just whacked them in half through the shell and scooped out the insides. I'm not sure that isn't easier, but there is some satisfaction in peeling them.

My new favorite breakfast in the world is toast with Marmite*, avocado, and an America's Test Kitchen-style soft boiled egg**. So good, you guys.

* FUN FACT years ago there was some kind of cultural exchange on ILX where people sent each other a care package of stuff from their homelands, and my care package was from ENGLAND and included a jar of Marmite and I loved it and now I order it from Amazon (some local grocery stores carry it but none that are convenient to my current location.)
** I find that 7 minutes is preferable for me, because I would rather sacrifice a little bit of yolk runniness to ensure the whites are fully cooked because bleeeeerrrrggggggg.

J Kenji Lopez Alt has mentioned how watered down CI/ATK recipes can be, trying to suit a middle American or New England palate.

Working in that kind of kitchen still sounds like an amazing job (until you start dreaming about boiling thousands of eggs to get the perfect one).

Mr. Kimball and his legal team are preparing a response, which is due to the court this month. Otherwise, he’s turning his attention elsewhere.

“Thanksgiving’s coming up,” he said. “I’d like to actually focus on that and Milk Street and everything else we are doing. That’s what’s important.”

He’s not wrong but the hit rate for my home cooking using them has been really high. I regularly add a little more spices & seasoning to a lot of their stuff to balance things out between my preferences and those of my family; starting with ATK’s amounts lets me know it won’t offend my wife, a few more cranks of the pepper grinder lets me know that I too will enjoy it
