What's the difference between Italian and American Vermicelli?

italian is thicker than spaghetti, american is thinner than spaghetti

i tried to get a decent amount of asian noodles but wouldn't have had room for all the egg and rice noodles

xp manicotti is both the noodle and the stuffed dish, figured if i used lasagne noodles that would work too (i sometimes use lasagne noodles in regular pasta dishes so maybe some weird person does that w/manicotti noodles)

but didn't include tort/ravioli/etc cause those noodles don't really exist without the filling

i didn't notice until just now how much it looks like worms. tastes pretty good with some wild boar ragu on there tho

strozapretti is also rly more of a dish than a type of pasta, it means "choke the priest" in regional slang and refers to making a heavy pasta dish out of spite when the local priest would pop round to visit and insist on being fed. So I've read a few times.

For me, I think one I like is risi/risoni, the little rice-shaped pastas you can put into soup to bulk it up. A blessing when you're tryin to stretch a soup for days cause you're broke.

No, it's for sure the pasta itself -- the version I have heard is that the form of the noodle itself that causes clerical strangulation, it being a kind of winged macaroni. And it's my favorite noodle to stand up to heavy or very complex-tasting sauces.

This is, by the way, a terrific book. Got it as a gag gift, but it's very useful for spontaneous guest stuff and "tonight I eat alone, but not in self-loathing".

Haha I add many things to my instant ramen all the time :D Usually boiled egg or tofu, green veg, miso paste and garlic.

SO many cheap azn food places here sell "yakisoba" and its made with gluggy udon noodles and makes me cross. Soba noodles are thin buckwheat noodles dammit!

the lack of e.g. rice vermicelli, glass noodles, cellophane noodles, banh pho, somen, nangmyeon, ramyeon, etc, etc, etc kind of makes this not a poll about noodles at all? you've got like like 20 options made from durum wheat, three options that are japanese (two of which are the same thing just cooked differently).

even if you were just doing euro noodles you should at least have spätzle.

best long pasta: I like the extremes when it comes to long pasta - either angel hair or pappardelle

rotini is my default these days

Of course sometimes dishes call for a specific pasta which is a different thing entirely. Generally speaking though the ones I listed are my favorites. Pasta is the best thing.

looks exactly like my answer. Pad see ew is one of my favorites.

Orrecchiette are my fave; because it means ears in italian & they are delightful

i like very very wide noodles or very very skinny noodles, don't care abt the ones in between

when wide noodles are pan fried in that sauce kinda blackened and they stick together.....so good.

I quite like using farfalle in pasta salads, the bowtie shape lends well to holding onto globs of vinegrette dressing and shredded bits of antipasto and spinach.
