Everyone makes Mango Salsa now, what is their problem?

So sick of mango salsa everywhere. Not just at mexican places, but thai places too, and on island food where it really doesn't belong, like jerk chicken. Mango salsa is boring and terrible and overwhelms good flavors and I feel like either in ten years everything will be served with mango salsa or people will look back at it with confusion, like savory jello molds.

i'm actually not crazy about mango salsa? i feel like the flavors don't really go together that well.

if you use the right mango it'll be more sweet-tart to begin with, then you add lots of sour/salty/spicy ingredients, then you've got a condiment that's actually interesting

i can sort of see pineapple in guacamole, like... what it would do, a bit of tart-sweetness playing off the spice and sour, cutting through the creaminess of the avocado. but i feel like it's a big risk to take.

another factor here is that with pineapple and mango ESPECIALLY MANGO and most other fruit, it's hard to find good examples in the average north american supermarket. many of these preparations sound particularly unappealing if one imagines them made with those beefheart-sized stop sign red grocery store mangoes or everripe perfect cylinder dole pineapples.

that Django got me Nuages (Sufjan Grafton), Sunday, 17 March 2013 17:31 (twelve years ago)

haha, no doubt.
salmon for tacos sounds weird to me (but I guess it's a thing). esp since most places are gonna use crappy fatty farmed Atlantic salmon so they don't kill a budget. mango with salmon doesn't sound very delicious either. I don't see one particularly complimenting the other. for fish tacos I think choices like cod, rockfish or something like mahi would be my killer

making plans for nyquil (outdoor_miner), Sunday, 17 March 2013 17:34 (twelve years ago)

I thought the point of mango salsa on fish tacos is you're using tilapia which has no real flavor

This brings me to a good question, what even is a defensible kind of fish to eat anymore? I've lost track of what different things the same fishes are called and which ones are regulated/endangered populations/etc and which aren't.

i won't eat tilapia no matter what sauce you attempt to drown it in.

s.clover, Sunday, 17 March 2013 18:26 (twelve years ago)

well, as NPR has told me, the endangered population regulation is pretty much horseshit. any fish that is borderline needs only a plan that the fishing industry will get their shit together within five years to be marked sustainable. so basically, a bunch of sustainable fish could be caught to the point of extinction as long as it's within that timeframe

my neighbor across the street is way into hunting and fishing. pretty much every time he goes for a weekend trip or vacation, it's some sort of hunting/fishing thing. I haven't been in his house, but apparently the back room has an issue where he had too many heads mounted on the wall and needed to find more space because they were almost touching in the corners.

About six months before I moved here, apparently he had been "buffalo hunting" at a friend-of-friend's place with free range buffalo. Unfortunately, hunting involved driving a skid loader out into the field, shooting a nearby buffalo, and then scooping it up. Apparently when he shot the buffalo, the other ones wondered what the noise was and went over to investigate.

:(

i think a good sustainable option these days is arctic char, which i've kinda really been enjoying lately. also there's a steelhead trout farm (i think in idaho) that has nice fish and say they're sustainable.

yeah, was generalizing and focusing on the bad examples I've tasted and agree, WmC. farm raising catfish sounds reprehensible since they're so invasive but that is a nice example of that type o'fish. as for tilapia pretty sure the one that is palatable is central American and not Chinese farmed, but still not a fan. it's sorta akin to eating carp. no offense to carp.
