so my impulse is to argue against the idea of the poll in general

having said that, i can imagine life without blue cheeses, soft cheeses or fresh cheese but i can't imagine pasta without parmiganio reggiano, sandwiches without swiss, pizza without processed mozzarella, etc

My cheese family is "goat" to be honest. But of this lot, bloomy rind or blue. My favourite cheese in the world, though, is a bloomy rind called Helford Blue so I guess I'm going with blue.
