How about Gene Clark's "Spanish Guitar"? Zimmy reportedly said himself that he wish he'd written it...
It's a great song but it doesn't sound like Dylan, there are other songs on that album though where Gene Clark wastes his time trying to sound like Bob Dylan instead of sounding like Gene Clark.
