I'm sure these have been done

I don't have the original on hand to listen to and confirm this, but I think that the Doors' version of "The Alabama Song (Whiskey Bar)" switches at least some of the chords from minor to major keys.

Possibly also Crosby, Stills, and Nash's version of Joni Mitchell's "Woodstock"; again, I'm not 100% sure and don't have either of these records to check.

is the offkilter guitar part on dinosaur jr.'s "just like heaven" in a different key or so far warped and downtuned that it just sounds like it?

It's not quite a change from minor to major, but I think Johnny Cash's version of NIN's "Hurt" changes a flatted-fifth (the ominous note in the main riff) to a regular fifth, and it makes it sound like a normal major chord.

The Cure's cover of "Young American" changes it from major to minor.

Best Coast's version of "Rhiannon," with dispiriting results.

I feel like I should be able to think of one, but no such luck yet.

All that comes to mind is this trumpet-playing idiot in the Joe Louis Arena who always plays an infuriating major-key version of "Hava Nagilah" during every Red Wings game. (At least, every televised one.)
