I'm guess (strictly guessing) that it might be a derivative of a shortening of "sinsimilla" like maybe people kept saying "sinse" or "sense" for short and it got changed to "sess" over time..

i always thought 'sess' was derived from 'session' i.e a smoking session. but that doesnt make much sense either. i thought i'd throw in my two cents
