i quite like watching jazz drummers. and i'm reasonably interested in watching orchestras.

otherwise i'll just look somewhere else. or close my eyes.

I enjoyed watching Vinnie Colaiuta play drums for the attitude he displays (as well as his finesse and groove).
I also enjoyed seeing guitarist Robert Fripp perform (I know that he does very little but move his fingers and press buttons with his feet, but I got to stand right beside him as he performed and seeing someone with such command and knowledge of their instrument and equipment was highly impressive. Trey Gunn on the stick (sort of like a bass and guitar combined into one instrument) is really enjoyable as well, but that is more visual. His body movement, the fluidity of his nimble fingers, and he can be downright funky when he wants to be (not enough in my opinion).
Pianist Philip Aaberg is quite impressive as well. It is as if he has ten fingers on each hand. His concentration level is extremely high.
Of course, percussionist Ray Cooper is fun as hell to watch. If only because it is obvious that the old coot is having a blast at what he's doing.
I also like seeing bluegrass musicians perform. Shitkickin' and darn tootin'. Yeeehaaaaaa.

I enjoy watching hugh metcalfe kicking his acoustic guitar, the way he plays and dances with the disconnected beefheart-ish sound of it and then getting his gas mask and screaming through his poetry and then the room blow up.

I love watching AMM, for the economy of effort.

I got the George Harrison tribute DVD for Christmas, the first 30 mins or so is a sitar performance, featuring Ravi Shankar's daughter (not that one), which was quite fascinating. Then Jeff Lynne came on and I fell asleep (to be fair, it was 03:30 am).

Depends on the player and the music, really. I'm pretty bored by watching most drummers/guitarists, unless they are doing special techniques. I tend to have a special interest in how, say, Sonic Youth plays their music, because there's a "so that's how they do that" factor. I like watching people play keyboards and assorted electronic devices, because I have a better understanding of those instruments generally.

Watching jazz drummers is the best. I like watching most jazz musicians for how they carry themselves actually.

When it comes to musicians in general, more of them need to dance.

my girlfriend doesn't like watching people play instruments. She says that the face a guy makes when he plays a guitar is the face he makes during coitus. that statement resonates. it's kind of gross seeing people curl their lip a la Elvis when they do a bendy. and that soloing open mouth/slack jawed face? eiw.
