This list is so incomplete. I'll only deal with rock/pop because flamenco/rumba/etc, there are interesting crossovers tho... earliest example I can think of is Los Manolos doing a rumba version of 'All My Loving' which hitted 1 in the spanish charts and some modern artists mixing traditional genres with hip-hop and rock... but overall they are another league completely and noone has mentioned any so far. I'm thinking of so many classic songs that haven't been mentioned yet but first I'll throw the first ones that come to my head atm:

People from Spain think “piensa en mi” and “el rey” by jose alfredo jimenez are from Spain as they’re so ubiquitous. The later is a staple in soccer matches, pamplona bullfights and piano bars. Practically everyone in Spain knows those lyrics by heart.

“el rey” by jose alfredo jimenez
I always thought this one was by Vicente Fernandez until I recently watched a documentary about the actual composer. Oh no, it wasn’t about him per se, i was the recent documentary about Chavela Vargas, so a Pedro Almodóvar connection, as in the first one.

Miguel Bose - si tu no vuelves
I had a conversation with a Spaniard recently about how much he in particular hated Rock en Español from Spain. He allowed me Luz Casal but not Miguel Bose as exceptions. I have to admit I like Miguel Bose’s acting turns and am fascinated by both his parents, but haven’t really heard his music. The conversation sort of got going, I think, because he is friendly with Miguel Rios’s daughter, who apparently has some dream pop band in Brooklyn. He also told me a funny story of watching a video of a Miguel Rios song in which Javier Bardeen appeared and thinking “hmm, Miguel Rios looks pretty good for his age!” Further discussion touched on the topic of Ramoncín, whom he also hated. I haven’t really heard him either but he seems to have some good musicians playing and writing music for him.

Miguel Bose is one of those cases where he’s not a prophet in his own land, latinamerican countries like him a lot and he has many hits but in Spain he’s not as popular late 90’s onwards and he’s seen as a very uncool and sort of tacky celebrity. It doesn’t help that in the most recent years he has become sort of a right wing nutjob.

Si tu no vuelves is still a beautiful song imho

Easy artist to cover or pick on a karaoke if you’re a man with baritone voice too. Has several songs everybody in spanish speaking countries know by heart - even if you hate him - and he kind of “talk/sings” most of his songs so you don’t have to be a great singer to nail them.
