Rhapsody - Emerald Sword (ah hell, the whole Symphony Of Enchanted Lands album is just about the definite statement in this sort of thing)
Evergrey - She Speaks To The Dead or Nosferatu

Make sure you brush your teeth though.
The Rage and Fates Warning songs might be more in the speed territory; might be better off trying later Rage material for the full-on German pomp.
