I saw M.I.A. on Subterranean this week, where she explained that "galang" means "go on with yourself" in Jamaican dancehall, which I knew. But then she also said it was a place in Cambodia, and most incredibly, a spice on Thai menus. She copped to reading a Thai menu and having a light go off in her head: "Galang!"

I still don't know why they bleep out half the chorus, though, whenever the video plays. It must be the Jimi Hendrix estate bitching about the "Purple Haze" reference or something ...

I'm not sure that "Galang" has got anything to do with Galangal, which I think is the ginger-related spice she means. I assumed Galang was a dope reference - cos of the Purple Haze line and all.
