Because all of Eric 'Slothfingers' Clapton's parts are twice as loud as everything else. His little annoying fills even dominate over Duane Allman's loudest solo.

I gave this a listen recently because I somehow got under the impression (briefly) that the Dominoes were Clapton's best band. I was mistaken.

It's also slightly upsetting that "Roll It Over" and the single version of "Tell The Truth" (probably their 2 best songs) were not included on Layla.

You are SO right about this! There were YEARS when the original version of the album could not be had until Mobile Fidelity figured it out and re-released it. The re-issue is some record executive's wet dream of putting his fingerprints all over an album that was mixed when it was mixed and that should have been the final word on the matter.
