When two words are abbreviated with an apostrophe (eg "it's") does that count as one word or two? And what about hyphenated phrases like 'self-loathing'?

I worked on the basis that the word count thingy in MS-Word would figure it out. It said 102, so I say 102.

I suggest to use the word count feature from (you have guessed it) Word. It's and self-loathing are each one word for Mr Gates.

I will also be using the word-count feature in word. My basic assumption is that a space denotes the beginning of a new word, whereas apostrophes and hyphens do not.

No, it's a random selection. If other records intrigue you then you can of course get in touch with other people but the record you have to write about is chosen by lot.
