One, Two... Folk You! (mix ideas?)

At the request of an old friend who's getting an acoustic guitar for Xmas, I'm to make a mix cd of folkish/acoustic tunes that will inspire her as she learns to play for the first time. Her tastes border on pedestrian at times, so I don't want to freak her out with a disc she'll never listen to more than once. But, at the same time, I'd like it to be a little more intriguing than any compilation in this genre that she could just pick up at Best Buy or someplace similar.

I already know two songs that are going on for sure, so help me ILM denizens flesh the rest of it out.
