Maybe Harold Budd? His stuff is pretty in a noodly ambient way. Particularly his stuff with Eno, and his "Moon and the Melodies" thing with the Cocteaus (tho not pure pianner).

Craig Armstrong put out a collection I think called "Piano Works" that are piano-only interpretations of his more famous songs and film scores. Whether you like it depends very highly on whether you like Craig Armstrong. Some of it is very pretty and worth seeking, some of it is very boring.

I'm currently making a Spotify playlist that is 'serious' classical music alternating with some piano interludes by non "classical" composers (such as the afformentioned Aphex Twin, Goldmund, Gonzalez, Akira Rabelais, et al).
Need to add Radicalfashion's Odori in here because the whole album is amazing and it never gets enough love.
