If you don't mind some jazz in your prog, there are many Bill Frisell albums that may be just the ticket for you. I especially recommend "This Land" (originals) and "Have a Little Faith" (standards.)

You might find Roger Eno & Peter Hammill's The Appointed Hour interesting. It's not all guitar, but it kinda fits the bill.

I'm not familiar with the Fripp and Summers album. Your description brings to mind Steve Tibbetts' "Yr".

I just got Steve Vai's Sound Theories Vol. I & II today. A live 2CD set of Vai + rock band + full orchestra! How can you go wrong?!? Oh yeah, by putting it in the player and listening to it.
