Piano: Esquerita, above all. Also Jerry Lee and Little Richard, who are pretty obvious, and Art Tatum, especially without accompaniment.

Organ: no contest for me. After recommending Teenie Hodges on the guitarists thread, I get the chance to mention his brother and fellow Hi house-band stalwart Charles Hodges. Esquerita's good too, as was Booker T.
