if you're using a mac, get podworks
if you're using a pc, get copytrans
i'd suggest buying rather than using the free versions of either, though, because you have a lot of songs and both programs are deliberately limited in how many songs they'll copy over unless you stump up the cash

Can't you just go into it like you would an external hard drive, and copy & paste them into your computer?

I have everything on an external drive, but I'm concerned about keeping play counts, playlists, etc.

OK, per Nate's suggestion: I have directions to hold shift/control down in order to prevent syncing, then selecting IPOD from the add folder menu. Sound right?
