"Boys In Short" is an instrumental, all sunny folksy guitar like Ultramarine or (even more strongly) Claremont56 stuff (Mudd etc.).
The other two are vocal tracks - the Tough Alliance remix of Taken By Trees is pretty amazing actually.

There's also a little matter called Thomas Fehlmann, although he sometimes sounds more like people working in chemistry labs, maixing solutions that turn all sorts of colours. He can be very florid and pastoral though.
I should revisit Philip Sherburn's Shaffel is Stronger than Pride mix, there should be no dearth of resources there.

Thomas Fehlmann is great but - though he has done a of pretty odd and organicky schaffel tracks - I'm not sure any of them would suit the thread. Check the tracks at the beginning!

Unless you're talking about a remix I haven't heard, I don't see how the VW track is Shaffel, unless tracks like Paul Simon's "Crazy Love, Vol. II" also count as Shaffel. (Maybe they do.)

Basically what schaffel as a sub-genre kind of did conceptually was retroactively define everything with that kind of groove as belonging to the same genre, which AFAIK hadn't been the case before - i.e. there was no way to easily group "Crazy Love Vol II" (which is a good nomination for this thread, as is, say, "Horse With No Name", though I'm more interested in recent stuff) with, say, "Rock & Roll II" or "Hot Love".
Smith & Mudd's "Plot of Land" kinda fits this thread, though maybe is a bit too slow.

Schaffelfieber 2 is only good and Schaffelfieber 1 is actively poor IMO - not really good representations.
I would highly recommend the all-schaffel Peel Sessions mix that Michael Mayer did in 2003 though.
