I was tempted to put Bill Evans/Jim Hall Undercurrent up here, Evans can do "pretty" so well, but his records usually have a few driving numbers that go for something else. The Waltz for Debby LP is unreal though (guess I just have the 2xLP Vanguard set now).

I don't think you can go wrong with any of the Paul Desmond albums with Jim Hall (with the exception of Desmond Blue, which featured an overblown orchestra). But anything with Desmond in a quartet is gold. One of his best is one of his very last, 1975's Pure Desmond, which featured regular collaborators Ron Carter and Connie Kay and the very Jim Hall-esque guitarist Ed Bickert. It was really a summation of Desmond's strengths.
