Lots of rappers have recorded verses over the phone from jail, Lil Wayne being one of the more recent.
And all of Burzum's keyboard/ambient stuff was recorded in jail.

Mattie May Thomas has four songs on the American Primitive Vol. II--Pre-War Revenants (1897-1939) collection that were recorded in 1939 at the Mississippi State Penitentiary in Parchman.
The liner notes say: "Initial issue of these astounding performances on Jailhouse Blues, Rosetta Records LP 1316 (released 1987), to which listeners are referred for more information. Good luck finding it!"

Bobby Beausoleil has recorded many works while incarcerated. Back in the day when I worked tech support for an audio software company I spoke with him a buncha times, which was always entertaining.
